AJ's Favorite Chocolate Chip Pancakes

There are so many different kinds of pancakes that I have made and recipes that I have seen. These chocolate chip pancakes are my son's favorite and he is a very tough critic. The best part about these pancakes is that they are very fluffy and easy to make. If you have children, they will enjoy helping you make these pancakes and enjoy eating them even more!
Ingrediants:
1 1/4 cups flour
3 tablespoons sugar
2 teaspoons baking powder
1 cup milk
2 eggs
3 tablespoons melted butter
handful of milk chocolate or dark chocolate chips
In a large bowl, combine:
- 1 1/4 cups flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
In a small bowl, combine:
- 1 cup milk
- 2 egg yolks
- 3 tablespoons melted butter
Whisk the mixture in the small bowl until smooth and add to the flour mixture in the large bowl whisking thoroughly.
In a small bowl, beat 2 egg whites on medium-high speed with a handheld mixer until egg whites are stiff.
Gently fold the egg whites into the pancake batter with a spatula. Once the mixture is combined, fold in the chocolate chips.
Fry pancakes up in the same pan that you melted the butter on. Batter makes about 12 pancakes.
